Cards of Remembering. They’re becoming something, slowly. I’m letting them sit and resonate.
I woke up this morning realizing that I had yet to make anything apple inspired this fall. Due to lack of rain here, the apples dropped very early and were not in their normal abundance. Unfortunately, because of this, I didn’t pick any apples. So, after a trip to the grocery store, I decided to make an apple crisp. Here’s the recipe if you’re feeling inspired.
Apple Crisp
Ingredients
6-8 apples
1 1/2 cups almond flour (if using white or other traditional flour increase measurement to 2 cups)
1/2 cup monk fruit brown sugar (or regular brown sugar)
1/2 tsp salt
2-3 tbs. of squeezed lemon
1 cup oatmeal, muesli or similar
6 tbs. of vegan butter, regular butter or coconut oil ( I was out of coconut oil so used vegan butter but I have made it with coconut oil in the past and it’s delicious!)
2 tbs. almond milk, milk or water
2 tbs. cinnamon
2 tbs. nutmeg
Prepare the apples
Chop and simmer the apples with 2 tbs. of butter, 1/4 cup brown sugar, lemon juice, cinnamon and nutmeg until just soft. Remove from heat.
Prepare the crust
In a large bowl, mix flour, muesli, 1/4 cup brown sugar, salt, milk and 4 tbs. of softened butter. Spread 3/4 of the mixture into a lightly oiled pie dish.
Pile in the apple mixture and add bits of remaining crust on top. Sprinkle with more cinnamon and brown sugar.
Bake on 350 degrees for about 45 minutes.

In a workshop yesterday, we shared a deep appreciation for living in a part of the country that moves in harmony with the rhythm of the seasons. There’s a unique peace that comes from being so closely attuned to the natural cycles around us, letting them guide the way we live.
As the vibrant hues of fall settle into quieter tones, we, too, go through our own phases—cycles of change, rest, and renewal. This connection to nature reminds us that, just as the trees let go of their leaves, we can let go of what no longer serves us.

Each season has its wisdom to offer, just as each stage of our lives brings its own lessons. Fall teaches us the beauty of release and transformation. There’s a gentle reminder here to embrace these shifts, trusting in the magic that change can bring. Wishing you a wonderful, healing and transformational November!
